Why does my game only lag in menus?

When moving around the world and interacting with it, the game is extremely smooth. The moment I open up a menu such as the handbook or the crafting menu, the game falls below one frame a second and it becomes almost impossible to use the menus. Seems odd to me.

Alright. For some reason it was playing the game in borderless mode. Switching it back to fullscreen fixed the issue, although I would still like to play in borderless.
