I do think Vintage Story would be making a great choice if they went for more extinct animals in their fauna. 

Maybe bones could be turned into carved decorative items? I feel like they should still be options for handles of metal knives and some tools, though. Bone, ivory, and antler being used as decorative elements could be interesting later down the line.
