in the menu before you create the world you can enable underground lighting and that is the only way I know of that you can grow underground/with artificial light

I've been trying to find a way to reveal a large portion of the map or the whole map so I can plan builds and where I'm going easier, but don't want to spend the time having to walk all of it, and was wondering if there's a way to generate a map so I don't have to do that. I tried using the world gen commands but it didn't give me the results I wanted. Thank you in advance
