While I only just picked up Vintage Story after a long hiatus so I wouldn't count as a new player, I can definitely relate with you. Even from the first time I played the game and even as I started again a couple of days ago, I am having a great time with the complexity and realism that the game gives vs MC. Always glad to see VS growing and growing! I was a bit afraid for it back then.
