It's definitely an issue with writing too much to a hard disk drive. I decided to try just moving the save folder to my SSD and linking it to where VS normally saves, and now the spikes are negligible, if even noticeable, while the disk usage still reports jumps of multiple megabyte writes.

It seems to be the same since I last remember. I've had the memory optimization option disabled and still do.

I have this issue as well; it seems to be something related with the disk usage when (I assume) the game periodically saves, as any time these occur my disk write usage shoots up at least a few MB/s, as much as around 20. I have a hard disk as well, and if there is any way to change where the game saves and loads world files I would test if the same problem persists with my SSD but I don't know how to do that.
What is causing my pigs to be extremely aggressive?

I updated to 1.19.1 in my vanilla save recently and I've noticed that my pig enclosure is difficult to get near to feed the pigs because all of them charge at the fence to attack me. They didn't do this before, and the only idea I have as to why they are is due to the most recently litter being born, but now they've grown up and even they are extremely aggressive. Is there anything I can do to remedy it?
My world is too large to simply zip up and upload here, and I can't replicate the issue in a creative world.
