its been Months since this post but I'm having the same problem on M1, did you ever find a fix?

Hello!! 

Playing the latest version on an M1 Mac. I'm having an issue where whenever I'm looking at a block within range (which is almost always unless I'm looking at the sky, especially in creative), all elements of the UI disappear. They still function, but just disappear. In addition it makes it almost impossible to use crafting menus, etc, because I almost always mouse over a block that causes the menu to disappear. This also means that trying to do anything in a confined space is out of the question.

Note - I haven't tried other versions yet, I can if necessary but I would rather know if there's a fix first before downloading other versions.
EDIT: Tried on an earlier version. Still broken unfortunately.

I know Mac is currently not entirely supported, so I'm not quite sure if this is related to that or not, I couldn't find anything else about this issue. However, if anyone has a fix please let me know! Thank you!!
