Currently it seems that bones are mostly clutter when your farm is fertilized and you are waiting for the harvest; yet there is so much potential with bones. By using the knapping mechanic, a multitude of primitive tools can be created. Things such as fish hooks, harpoons, needles, and maybe even decorative skeletons would be a good use. If it isn't already, bone broth would be another way to use up this seemingly infinite resource.

I like this train of thought. I think fishing could be expanded but I'm sure that will be a lot of development with the addition of more mobs and how they function in the world and with character. Then adding in things like fishing traps and fish hooks would make a lot of sense. 

I have thought that bone broth would be a nice addition like 2 bone, 2 water then it would be a drink like juice but gives protein rather than fruit.

Bones have historically been used for arrow heads, spear points, knives, needles, hoes, etc. like you said. It would probably be a slightly different knapping mechanic but would be very fun to see.

That's not all, bone ash has been used in the making of pigments, Bone China, refining metals, it is used as a fertilizer and when reacting with certain acids can make even better fertilizer. would be great for late game farming.
