Where are the configs for the server?

I'm trying to fine tune my server. I added a few lines in the serverconfigs.json and, after making a mistake in it that I only caught later (I duplicated a value), changes made in it didn't seem to work anymore. SO, I started typing my configs in the chat window, which worked after server restart. But those changes aren't transcribed in serverconfigs.json. Now I lost track of all the changes I've made.

My question is: where are the configs changed by typing in the chat window stored?

1) Is this a Single player server or a multi-player server?

2) Please give some examples of the types of Configurations being changed.

3) Do you have any useful information the log files?

It's a multiplayer world.

I changed foodSpoilSpeed, playerMoveSpeed and playerHungerSpeed, amongst others. Typing these changes in the chat box worked after server restart. But I can't find where those changes are saved. It's not in serverconfig.json because the values I set there are now ignored.

Log files are not config files, afaik
