This just happened to me for the first time, in version 1.20.3. Rode the elk off a hill, elk took fall damage. I rode the elk maybe 50 more blocks, dismounted, and it attacked while i was aiming at it with the poultice I meant to heal it with. Is a savegame upload helpful?
