Correct. North means it gets colder before getting warmer, south means you immediately start getting warmer.

You're asking about what is called a "bowtorn". It's an enemy mob when you don't have creatures set to passive. It has a ranged attack, as well.

In vanilla, no. There used to be a mod (Break Down Tools) that would allow for breaking them down with a hammer in the crafting grid, but I don't think it's been updated in a long while now.

Should be pretty easy, but I'll look. Give me a minute.
Edit: Actually, there seems to already be a mod that will let you do exactly what you'd like. Configure Everything, after the first run with it, creates a config file in VintagestoryData/ModConfig/ConfigureEverything/Server. The file you'd want to edit is called CropProperties and you'd input 0 instead of any positive value where "NutrientConsumption" has, for example, 15.0 for amaranth.
