@Tyron Previously I was running 1.20.4 and I decided to upgrade to pickup all the fixes being put in. I went all the way up to 1.20.9 everything loads fine and the game works but when you run around the UI flickers in and out. I'm running on MacOS 12.5.1. So i decided to slowly walk backwards version by version and it seems it was introduced in 1.20.8 as it works perfectly fine in 1.20.7 It seems to be related to the mouse position somehow because if you hit E to open your inventory and then move the mouse around the UI flickers in and out.
