However, I worry about the frequency of having to rehydrate, given that hunger is already kind of a pain in the A. Realism requires much higher frequency than food, but for the sake of gameplay it should probably be the same.

Looking at the roadmap, I can't find these things. "Gem cutting" can at best be interpreted as craftable jewelry. Am I missing something?

Diamonds have lots of real life applications due to their hardness, e.g. cutting, polishing, sharp tools, etc. Why not require diamonds for certain crafts?
