Found it on the wiki right before your message, uninstalling.

Upgraded from 1.20 to 1.21.5 recently. Visited Nadiya and noticed many blocks were missing or invisible. One structure was the well, I crawled inside out of curiosity and found a sign with the letters: NGGYU NGLYD I disabled all mods and created a new world and it's still there. Does anyone know what this is or what it means?
