Slow walk mode that allows us to step up and down a block while sneaking. Triple tap sneak maybe? Jumping or sprinting cancels this mode. 

Animals cannot see as well through grass.

Defensive spear posture: Face a charging animal and Alt/Ctrl right click to at the very least guarantee a medium sized animal (wolf, boar, sheep, etc) is harmed enough from full health to flee. This will instantly break the spear and not work at all if the spear has less than 2/3 hp. 

Nighttime insect ambiance and ambiance fadein/out; no more abrupt silence at night.

How about instead of this, some sort of climbing mode? It would be very useful for traveling on foot and exploring caves(albeit perhaps in foolhardy fashion). The main drawback though is that you must have both hands free in order to climb. Climbing also speeds up your hunger rate, and I would also put some sort of limit to how far you can actually climb before getting too tired to keep clinging to the climbing surface(repurpose the oxygen meter here?). At most, I'd expect it to be most useful for scaling smaller mountains and searching surface ruins.

Now on the other hand, the main drawback that I see to adding something like this is that it can potentially break some of the story locations we have. They weren't designed with free-climbing in mind, so outside of special rules that prevent climbing in specific locations(which will also break immersion), the locations themselves would probably need a massive redesign, which I don't think would be a good thing. I'd rather just keep what we have, and leave that kind of mechanic to the mod realm.

As for your original suggestion...I wouldn't impose any speed penalty and just put it as an accessibility option. Auto-step up one block heights, instead of needing to jump.

Could be interesting, but may be too much of a performance hit depending on what kind of coding accomplishing that would require. I'd rather have some sort of craftable item to mask your scent, or otherwise reduce the range at which natural creatures can detect you.

Or just hold shift for defensive posture, like a shield. It's a neat concept, but I don't think it really works that well in terms of gameplay. Wolves generally come in packs, so making just one flee won't cut it. Sheep won't charge you unless you either get too close or attack them first. Boars...aside from being the least dangerous of the mentioned creatures in the game, there's a reason that boar spears exist IRL. The little prongs on the sides prevent the boar from ramming itself down the entire length of the spear to ruin your day, and real boar are VERY dangerous.

I daresay this will probably get added sooner or later. That being said...I could also see ambient noises fading abruptly within a certain radius of monster creatures. Not that monsters really seem to bother wildlife at all, but it would be a nice touch and help keep the spooks spooky in the dark.

Change fruit press model, the current iteration is a fly press which requires a leadscrew, there is no feasible way our characters can make leadscrews with anything currently in game. It could be a simple lever. Can also enable the pulverizer to do its job but only at low speed.

Climbing sounds cool and I want that too, but the entire purpose of a slow walk sneak mode (where you can jump or fall off blocks) is to avoid spooking or aggravating wildlife. Currently sneak is useless if you are not on flat ground. It could also be useful as a way to delay landslides if dirt instability is enabled. Maybe this mode automatically enables climbing too if both hand slots are free. Maybe we can climb free hanging vines too with a chance of them breaking.

To climb you only need ladders 😉
(7x / 2) sticks to climb x blocks : with a full stack of sticks you can climb 18 blocks!

Would be nice for early hardcore games when a wolf or a bear decides to kill you, they run faster than you thus you can't ever escape if there's no water nearby 😕

Is mandatory, to me... To allow hunting to be realistic and less a pain 😕 Easiest way to hunt right now is cheesing mobs in water... That's dumb!

When game starts, just find a big lake with a decent island (you can expand the island if needed) and setup a camp, no walls required... You'll get perfect farm layout without the need to get a bucket :-3
Find some trader cart nearby so you can hide during temporal storms or get through the night if your camp has too many rifts...
Bears can't swim so you get early drops from them when they try their way through the water and you basically swim faster than most other mobs!

I hope they add sharks for oceans and crocodiles for other watery areas x_x'
And fix the drowning bears : they are very good swimmers IRL!
Mobs should avoid going through the water in areas too deep...
And traders should not allow us to us their chests or sleep in their bed..! And they should repel us during temporal storms and nights 😕

Oh I know. 😛 But I meant climbing without the need for ladders. However, I think a change like that would break a lot of story locations, so I'm fine sticking to ladders and leaving the concept of free-climbing to the modded realm.

Hmmm, I dunno, I kinda like the danger to fall into a pit without the gear required to get back up 😛 Then ladders would become rather cosmetic 😕
And if we can climb, then drifters should be able, too! And I prefer them crawling X-)

I'm perfectly fine with drifters not being able to climb without ladders. That's the department of a different enemy, heh heh.
