Anyways, sad to see such a loss in sat from milk to cheese, but also noticed blue cheese appears to have less sat than cheddar but they require the same mats and is overall harder to make? So what exactly is the point of blue cheese other than selling to traders? "Just because"? Couldn't find any special use other than variety.
