After some testing i was able to compile a small collection of icons, symbols and special characters that are compatible with the in-game font used in the signs, allowing for some neat designs. Here are the ones i was able to test and compile so far:

These are ASCII characters, however, not ALL ASCII characters are compatible with the font used in the game. Those that i used and posted there are just the ones i was able to test and verify that indeed work.
To make those arts on the signs and books it takes a little bit of practice and positioning. If you need i can send a screenshot of how they look like both in the sign and in its UI.

I wasnt able to. Maybe because im on mac?
