Give more use to for alcohol in the game by having it be a guaranteed option for trade per trader. Each trader will have a specific taste so you can somewhat expect what to brew in advance. Different fruit wines or ales preferred by each trader. Trading a jug of it for roughly 3-5 gears or so. Commodities could only want aqua vitae cause he wants something useful. Just something more to spur economy for the player while also incentivizing interacting with the brewing mechanics. 5

Traders having a chance to want alcohol seems fine. I do agree alcohol as a whole needs more. Honestly the huge variety of crops in general just fell like clutter at the moment and could use more reasons to seek out particular types. Pretty easy to balance out. 1 gear for a 3l jug too much? OK, 1 gear for 2x 3l jugs. Or make the market react to supply by reducing price or quantity demanded or both. Makes it good for intermittent trading, and particularly good for early game, but phases out if you spend a lot of time riding the circuit. (Yah, I know. "Why make the player play the game the way you want?" Well, players always have the trump card of Creative mode.)

Perhaps a cask that holds 10L that would need some higher tier resources like planks and hoops. Though that would have to be balanced by being worth more gears. Or different traders with different preference for storage vessel. I don't think a small steady stream of gears is really that problematic, though I do see where you're coming from.
