I think it would be cool (and very on brand) if you could tap trees for sap, syrup, resin, and potentially rubber.

- You could tap maple, britch, and walnut trees for their sap in the winter and spring, then boil it down into syrup. syrup would probably be pretty interchangeable with honey mechanically

- You could tap pine an acacia trees for resin, making it less frustrating to gather a lot of resin

- Also. I'm not totally sure what you would do with it, but it might also be cool if you could tap rubber from rubber trees

If I'm being completely honest I don't think this would add that much to gameplay since syrup taping would only be available during at most 1/3rd of the year, and the last stretch of the year at that. It's quite likely that most people wouldn't interact with it since it would be fairly late game (end of the first winter at the earliest, which is dozens of real life hours into a world) for not that much mechanical benefit. 

Never the less, I just think it would fit the vibe of the game so perfectly and wouldn't be that hard to implement.

Something about the asthenic of gathering sap from a nearby forest in the quiet days of early spring, brining it home, siting by the fire as it boils down, then bottling it in the cellar to be used throughout the flowing year really speaks to me.

It could be another expensive and not particularly useful, but very fun and on brand food prep system. Like cheese making and pickling.
