Linen Stitching

I bought some linen cloth thinking its just linen cloth, but I have 2 with offset stitches and 2 with diamond stitches. Can I convert them back to regular linen cloth because they don't seem to have any function?

Unfortunately no.  It's an oversight that recipes cannot accept those patterns.  If you're in single player, I'd suggest just using creative mode to trade them in for normal linen.  Hopefully this gets fixed some day soon-ish.
