ROFL! I have an LG Monitor, and have had a lot of trouble with their weird and unnecessary and undocumented power saving settings.

Oh, hey, I just remembered something, and this MIGHT work to fix your issue. You should go in the "Manage 3D settings" in the NVIDIA Control Panel and look at the bottom of the list. Is "vulkan/opengl present method" set to "Prefer layered on dxgi swapchain"? If its not, then try setting it to that.

Do you mean it keeps turning off in the windows display settings, or just in the game itself? I just leave HDR on all the time in windows. It stays on when I alt-tab. The only problem is that neither RTX HDR or Auto HDR seem to work for Vintage Story, so it looks the same as when HDR is off. If it matters, im running a 4080 Super. Its not the same card as you, but its close. Like one step down or something.
