Rooms have a max interior size of 14x14x14, so if it's any larger than that then it won't count as a room. You can use the command /debug rooms hi to check if it counts as a valid room (it will highlight green if it does)

Personally, I found the trick to this is sitting while punching the holes out. Puts them right at eye level

I couldn't find anything on the wiki on how animals with varying coloration, such as chickens or hares, inherit color. Is it random? Influenced by environment? Based on parent coloration?
