Laptop is on low end, had to run game on low settings.

Game froze and crashed in a black screen. Resulted in my laptop's display scale getting messed up somehow. Trying to start it up again leads to this:

Uninstalling and reinstalling gives the same error on startup. I had mods on the first time, but none now. So why is this happening when it managed to chug along before?

That's indicative of the graphics driver crashing and not properly restarting itself. The crashlog also reports "The driver does not appear to support OpenGL", which points into the same direction.

Have you tried doing a full restart of your notebook and checking if it works again afater?
