As it says on the tin. 3 servings in the crock (limited by what mushroom was available) and the middle 2 crocks of 4 are already "17% Spoiled" despite when I left the house to mine they were listed as being fresh for 53+ days.
Is this something new caused by the update?

I am running mods, but none that touch food. Combat Overhaul, giving temporal mobs loot, the mini-map pin mod, removing dwarf birch almost entirely... but nothing touches the food tables.

I have no idea how to use the "issue tracker," so if anyone can humor me I'd appreciate it.

I've heard of such, but haven't seen it myself. Once upon a time, the spoilage time did not "top up". If you cooked with ingredients that had only 8 hours of freshness left (out of the 48 hours it started with) the resulting meal would be only 1/6 of its potential "sell-by". Maybe it's back to that? Dunno. I got into the habit of cooking with only the freshest ingredients.

Not always a possibility with me unfortunately. So I extend the life of my food for as long as possible by using a cellar cooled with cellar ice complements of Medieval Expansion. Also found the Mastodon chest mod, and it works great as well.

It might be something to do with temperature change, even in a cellar the temperature can change by about 5-10° throughout the day if its not set up correctly which can half or even quarter the shelf life of your food without you knowing it/noticing because it'll go back down by the time you next check. 

Idk I make sure I don't leave anything unattended for too long, especially things like eggs which seem to like spontaneously spoiling for me despite them being in a cellar with 40+ days to spoil on them.
