Does time pass when no one is on a server bought through the vintage story website?

I bought a server from the vitage story website. I once left it open and when i came back everything was spoiled. The memory feels vague and my friend doesnt remember if they where online at the time. Im wondering if i leave my server open if things such as food spoiling and winter arriving will happen.

It depends on the server settings. I don't know which setting it is, but there is one to prevent time from passing while no players are online. Do keep in mind though that one player playing more often than the rest, or players playing at staggered times, can pass the time rather quickly, so perishables may still spoil and harvest windows be missed if there are players who don't play as often.
