    It takes time before you start to freeze.  having a water status (like soaking wet) will also help hasten the freezing impacts.

    When animals spawn they will typically spawn a male/female pair (possibly more than one of each) with young.

    Welp.  What you done did was create something of a stepped pyramid.  I'm not familiar with how bears interact with fences, but to make it more effective move the higher tier fence to be vertically above the outermost ring of your ground fence tier.

    Yes, crops grow while chunks are unloaded.  I believe that is the case for animals and curing foods like cheese.

    Crops MAY grow, but it is at such a geologically slow pace that it's best to harvest the plant, hope for some seeds to plant and farm the seeds into a greatly increased harvest than waiting.  
    As of 1.17 I will confirm (because I have done it) that tilling soil of wild crops will cause them to mature in a day (possibly even less).  Be sure to protect against your new rabbit magnet filled with bunny sirens.

    Sounds like a mod.  I know the pit kiln time left was from a mod.

    I can attest that bears may not go over fences, but they can (and will) attack through fences.  I lost 6 pregnant gen 2 ewes to a bear attack after losing 2 pregnant gen 1 sows.

    Seems like you happened to build your home in a temporally unstable area.  run around the surface long enough and you will come across areas that are unstable without descending in the depths.  My current world's spawn area is temporally unstable on the surface.

    Basically, yes.  When rift activity is high rifts are likely going to appear and drifter begin spawning in the area.  Lighting can eliminate rift generation.
    Before I had lanterns some rifts formed really close to my enclosed home.  I had torches lighting up the inside, but still saw drifters spawning within a few blocks of me (and appear before my eyes even!)

    I believe it is 40 blocks (corrections welcome if this is wrong), but it could be only 30.  I generally go about 25 to be safe.

    You should get a crash log (and most likely a button in game that will open said log).  See what the log says.  If you need help with reading the log, post it here and one of the techie people here will help.

    Milking ewes less than generation 3 will likely be unsuccessful.  Generation 3 and above are domesticated enough to allow successful milking.
