I tried 3 different worlds now, but I cannot get anything done in them, as the terrain is so incredibly spiky and filled with trees. It's impossible to cross even 10 blocks in any direction without either falling into a super deep ravine or being blocked by a wall 20 blocks high. I can't imagine that this is by design. Is there anything I can do?

I didn't want to change things too much as I want a true taste of the vanilla experience for my first run through, so I just re rolled a good few more times. I must just have had some bad luck.
