Right now we only have rafts, I think the next boats we should be able to make should be wood canoes which function the same as rafts but faster/better and animal skin Inuit style kayaks which could be faster than canoes at the cost of being more expensive and/or less sturdy. Both of these could be made pre copper age and then once you have metallurgy you could add something like a rowboat made of planks and nails.

Eventually I’d love large European and Asian style sailing vessels but for now I think the first sailable vessel should be a Polynesian style outrigger, it would be small and not nearly as hard to implement. A bit of stretch but I think a Viking longship style boat would also be a bit easier to implement than say a caraval or a galley.
