I bought all of the honycombs from an ag trader and sold him a sythe and knife. All good.

He replenished his stock, I could sell him a new set of sythe and knife but the honeycombs did not replenish.

How does that work?

The traders replenished stock for buying is randomized, based on what type of trader they are, but you should be able to sell them the same things every time.

Guess you were just out of luck that they didn't replenish the honeycombs that time.

Here's how traders work.  You can sell as many items as you want to the trader in the right side (limited by your supply of those items), BUT the trader is limited by the gears he has to buy with.  He would buy 23 items at 1 gear a piece or 2 items at 10 gears a piece.  He will keep buying as long as he has gears.

He has a limited supply of items on the left (just like you have a limited supply of knives and scythes) that will be restocked; in this case the trader will restock HIS supply in 6 days (as noted above the left hand box of goods).

When I bought his stock, he had 1 day to resupply. Then he resupplied but his stock didn't replenish.

I do not believe this is correct. The amount of any particular item he is willing to buy does not seem to be tied to the amount of gears he has to spend. There is an artisan trader near my base who occasionally buys beeswax, but he never buys more than 12 at a time (in 2 batches of 6 each). Once I've sold him that, he still has other stuff he's willing to buy from me, and he still has gears to spend. Yes, if he runs out of gears he can't buy anything more from you, but that's not the (only) limit on his purchases.

As for replenishing, he doesn't necessarily buy or sell the same things every time he replenishes. Rather, I think he just generates a new random selection from the sorts of things that particular kind of trader deals in. 

We should not think of the traders as operating in isolation. The dialogue indicates that there are other people in the world, and so presumably when you're not looking, the trader is delivering or collecting stuff from them, and aggregating demand. When the trader is willing to buy beeswax, it's not necessarily for his own use; he may have an order from some off-camera artisan who wants the stuff.
