First of all, excuse my English. I'd like to contribute a couple of ideas that aren't that difficult to implement and that can provide more fun and entertainment. Adding more animals to the game is a challenge. There are several, but it seems there aren't enough in all biomes. Some are hostile, for example.

Here in North Carolina, they even use the crosswalks and during the school year they frolic with the children during lunch and recess.

…and then they come and disrupt traffic, eat all of the grass, and crap it out on the sidewalk in Florida.

I love the idea of more animals, as well as useful materials or pets, my only concern is the lag, I receive a significant amount during high rift periods after the last update and I worry that more variety of animals could up spawns too much, however, a spawn cap also seems limiting. I have wondered about including seagulls before near large saltwater generations.

These are already slated for the near future(1.22?), along with hippos.

Stingrays shouldn't drop bones, since they are not bony fish. They would, however, be an interesting hazard for shallow water, in that they can sting a player should they get stepped on or otherwise be disturbed.

Big cats in general, really. Would offer some variety from the standard bears and wolves.

Turkeys and pheasants and other game birds as well, though we really ought to have a flight system for birds before too many more get added. Emus and ostrich and rhea and dodos don't really need such flight though. I will note that geese should be aggressive, particularly if they have a nest or goslings nearby. Same for ostrich and emus--aggressive if you get too close to their space.

Only if there's eucalyptus trees added. Otherwise these poor creatures will have nothing to eat. I'm also not sure that they should be completely passive; I think it would make a bit more sense to have them act like foxes and avoid the player when possible, but attack when provoked.

Also require shadow RNG for drop bear spawn.

I really like the idea of birds, especially sea and forest birds, from an aesthetic perspective rather than as a mob that you interact with necessarily. I love how bee-hives look and work. Would wild nests be an option? They could spawn naturally on trees and cliffs, have a chance to generate new ones near old ones every spring, and be able to be picked up and moved.

Within a large range of the nest you would have large simple particles which would wheel about up high, then dip down to the nest block, or fly up out of it. The nest would also be the source of bird-sound, maybe forest birds if the nest is placed on a leaf block, or gull sounds if the nest is on stone or grassy soil. A seraph could fossick in nests by right clicking to gain a semi-random number of feathers and maybe an egg every now and then, causing the bird particles to dive-bomb the seraph. 

I get the feeling that particles, even sort of complex ones, are much lighter on lag than actual creatures.

I think it's a decent idea for smaller birds like songbirds and things. Larger birds such as crows, falcons, eagles, and vultures I'd rather be able to somewhat interact with(falconry please?). One issue I see though, is not all birds build nests, or what we would think of as a proper nest, anyway. Killdeer will lay their eggs among gravel for camouflage, and for doves...a couple of sticks will do. Not that all the birds have to be 100% accurate...

Falconry would be amazing!

I think the best bet would be to have some larger, interesting, interactive birds, and then nests, or maybe 'perching branches,' to produce generic birds particles and sounds. Seeing as chickens are only kind of worth butchering, I don't think we need to worry too much about having full interactions and realism with even smaller birds. I just want to hear them and see movement in the sky.

I use Stone Age Fauna mods precisely becuase of this. Tho sadly they are only for 1.20.12 currently but the mod author is working on an update despite his busy schedule (bless his soul). It's about 19 mods in total that each add a variety of different real world stone age animals, and they are great (tho the elephant drops are imo way too much). My 1.21 world feels so empty without them now. Give them a try maybe sometime?
