I got a 1.19 save with all the progress. I wonder if it will work with new update. Will the old/new chunks update/generate with the new stuff, will the new sea and land generation/items/animals spawn just like if it was brand new 1.20 save? Am I missing out anything by staying on an old save?

If you want to bring an old save forward, I think I would probably wait for the official 1.20. You are supposed to be safe migrating an old world into an RC, as opposed to a pre-release which may or may not be OK, but if that world is important to you, I wouldn't chance it. There is a chance that the full release world updater will add the new story chapters, but if you can't wait, they will almost certainly tell you the server-size command to generate that content.. If it's like the RA, it will take the mystery out of finding the place.

New chunks will generate with the new stuff. Other than some of the bigger 2x2 trees and new ruins I'm not sure it's going to be all that easy to see the difference on land. The sea life will be a jarring transition, though. Going from basically nothing to milfoil too thick to see through...

You can also play like I do if you're in single-player. I regularly transfer my base using WorldEdit to new worlds, keeping all my builds intact, whether on the same seed or a different one if needed. So, if you can’t wait for the stable version, you can always use WorldEdit to move your base and builds to another world.

I don't know if it tells you where it spawns them, but assuming you have to run the command for each separate location...oh yeah, it's going to spoil some major plot points if you do that in 1.20. For those who don't really don't want spoilers, I would recommend either starting a fresh world to ensure the new stuff generates without commands, OR if you have a friend/family member handy(that you trust to do this) get them to run the command in your world instead.

And like @Divočák mentioned, if you're willing to figure out WorldEdit, you can copy your base over to a new world and have the best of both options, as it were.

You can generate the story structures, yes, if they don't already exist in your world. I think you can also regenerate the story structures that are already there as well, as I seem to recall someone doing so with the Resonance Archive for their server. I'm not sure that you can generate other structures, or regenerate entire chunks though.
