So i tried to do the quenching stuff and my axe head got destroy first try ? I'm trying to replicate the thing but i can't do it again, i'm like starting to doubt. I saw a topic about the break chance but that kind of to much for me. So is there really a 5% chance the tool head shatter even if the tool tip don't say anything ?

There shouldn't be--the first quench, as far as I'm aware, is supposed to be free, and items that have never been quenched shouldn't have anything listed in the tooltip. In that case, if it broke, then it's probably a bug, or potential mod interference if you're using mods(probably not the case here though).

One other possibility, though it's a bit of a longshot--did you dunk the item in water after forging before trying to heat it back up later? I forget sometimes and dunk my items to cool them off like I did in prior versions, and in many cases the item is hot enough for the dunk to count as a quench. So that may have been what happened--an accidental quenching followed by a really unlucky roll on the chance to break. I think the first quench, at least for power, applies a 10% breakage chance, which is quite low but not zero.

So i did cool my iron tool head in the water but below the quenching temperature and applied clay, what is odd is like i'm sure nothing was showing in the tool tip and usually it does at least for the hardening temperature, i usually forge at 750. 
Maybe there is a chance the fumes from the forge got me and i didn't catch the quenching temperature message in the tool tip.
The "no tool tip message was weird" and i'm sure i double, triple checked because by two tools broke just before that and i was experimenting.
For the moment i say that a mistake on my side then, but if somebody can replicate that would explain everything. ^^

It would seem that there is a 5% shatter chance on first quenching. I've found that there should be based on the code and by modifying item attributes, but wasn't able to fully confirm it myself by getting it to happen in spite of having made a couple dozen quenched items.

Is it possible to change the temperature of an item with commands ? I would like to test it more, for the moment i'm gonna use hundreds of forge.

While holding the item in hand, use:

/debug heldtemp <temperature>

The temperature value has to be an integer in degrees Celcius, e.g. /debug heldtemp 820 if you want to set it just above the minimum quenching temperature.
