Im trying to make a charcoal pit, but no matter what I do, I can't place the logs on a piece of grass to make a fire pit.

I just tested to make a charcoal-pit (in 1.22 rc7), and it worked for me. I used 3x3x1 pit, and I don't know if there is a minimum, but I used 3x3x1. Are you sure you filled all the spaces, and that you press [CTRL] when you put firewood into the dry grass? Otherwise, I can only recomend you reinstall everything, since it works for me. And also I have not any mods, it is pure vanilla. So if you use mods, maybe a mod can disturb the game mechanics?

Welcome to the forums! In addition to checking any mods used, as @Ewil already noted, I would also test a fresh world to see if the issue still occurs. Keep in mind that 1.22 is still unstable and worlds created in the pre versions aren't suitable to be upgraded. If the world was created in an rc version, it should upgrade just fine, but since the release is unstable there may or may not be lurking issues.

They may have broken some functionality unintentionally. 1
