I am trying to empty my bucket but nothing I am doing is working.  Shift is my sprint key.   Shift-rclick drops the buck on the ground.   Ctrl-RClick does nothing.  Right click does nothing.  I am at a loss.  Is there a SPECIFIC keybind (note: not actual button) but a name of a keybind that is tied to emptying items..  (example:  Move forward, Jump.. that is what I mean by the name of the keybind).   So many people just say to press X or what have you.  If I can find the keybind in the list I can make sure it is bound correctly to something but I do not see anything say 'Pour' or 'Empty' or anything similar.

 

Also, I was trying to move a block of water into a 3x3 area with the middle block emptied out so I could pour water in it.  That does not work either.  I can't pour water into an empty slot OR just pour water back into an existing pond to just empty my bucket.

I had the same problem when I first started.

It's because Shift is your sprint key. I switched mine to Q. In the previous version, I could still use Control to empty a bucket, since the update I now have to use Q.

That is not fixing anything. I changed my sprint key to something besides shift and I still cannot empty the bucket. (Z in my case since Q for me is set to Drop One)

Just ran into this myself as a new player, so much searching showed an answer that didn't work. Was able to empty water bowls by only holding shift then RMB. Shift is also my sprint key. I didn't change any hotkeys from default.

Welcome to the game and forums! Ctrl + right-click is the default combination to empty a bucket. Do be warned though that if the bucket is completely full of water, emptying it on a tile that isn't water will create a source block, unless you disabled creation of water sources from buckets that is.
