A lot of times when I'm hunting an animal and wound it enough, it flees and I lose sight of it, and then cannot find it again.  It'd be neat if when you damaged something enough, it'd start to leave bits of blood splatter in the ground every once in a while so you could track it down.

 

For an added bonus, wolves could be attracted to the blood splattering.

I would have guessed a rust brown. Kinda like if red, iron-rich blood got rusty. Maybe even a thicker, more goopy, somewhat flaky slop than common blood

Oh that's a great point. A gloopy black, not quite as thick as oil, but also not as watery as common blood. A rust black, much like their non-existent hearts.

While the color isn't specified, I would agree, it's probably a dark rusty color or black like oil, given the semi-metallic nature of the monsters and their general color scheme.

 

As for the initial suggestion, I like it. Could be a simple effect that applies for a short time after a creature takes enough damage to begin fleeing. Would also give more incentive to keep healing items on you in case of an accident, if falling below a certain health threshold could make you more noticeable to unfriendly things.
