The difference is they won't be quite as effective as in the north due to the hotter climate. What rates are the storage vessels reading? To my knowledge, cellars in southern climates should have rates similar to northern climates in the summertime, so stuff like raw meat should stay fresh for at least a few days before starting to spoil. One thing you might check is the cellar's construction, since using wood or placing slabs that aren't flush to the interior can throw things off.

I'm early into the save so I was just covering them with dirt using the alt key to place blocks over it and it was making stuff spoil faster.. and still put meat and such inside. but after putting myself into the room with the vessel it seems to work fine? Sorry to bother with this post I guess it doesn't update like it used to in the pre build

The space will just cease to function as a cellar when you remove the dirt to access the vessel.
Broccoli Clock Posted February 19 Report Posted February 19 (edited) Is this different to 1.21? As altitude is the answer currently. The higher you go, the colder it gets, even in the desert. Now while it'll only be a few degrees in places, that might be the cut off point for food spoilage and/or growing crops. When I played a desert playthrough, I found cellars only increased food spoilage, and in the end I used a 'subsistence farming' strategy rather than stockpiling. Edited February 19 by Broccoli Clock

If that is the case for 1.22-pre, I suppose this is either an intended change from 1.21, or an unintended bug. I am now playing in a rainforest/savanna region and the climate can damage crops like spelt with heat, but the cellar still works fine with a spoilage rate as low as 0.29.

The area I (intentionally) settled in was "pure desert". It wasn't huge by any means and had things like savanna within 400 odd blocks, but the heat was ruining everything and making crops 'impossible' to grow crops.
EnbyKaiju Posted February 19 Report Posted February 19 (edited) So I just did a little test on 1.22.0 pre-3, super hot & arid world at the equator. Set up the test at ground level (day temp about 38c). Made a cellar out of brick and left the ground as sand. A single door. Outside food perish speed in a storage vessel: Vegetable 1.8x, grain 1.2x, other 2.4x . Inside spoilage rates in the same vessel: vege 0.38x, grain 0.26x, other 0.51x. This checks out as the default temp cellars will get to no matter the temp outside (if you go into cold climates with outside temps below what a cellar would normally give it'll add extra time on top. So I'm guessing it's either a bug or the room isn't counting as a cellar for some reason. If it was a problem with pre 1 or 2, they fixed it Edited February 19 by EnbyKaiju
