I'm really far away from my base and on my way back I found some cool looking coral and seaweed, I want to collect some specimens so I can replant them in a pond I dug out near my base but I want to know if they'd survive in fresh/non ocean water before I do that.

To the title: yes, salt water does not irrigate crops, but harms them.

To your specific question, I do not remember the coral and seaweed check the surrounding water block, but you'd better check the handbook before breaking them. Some blocks do not drop anything when broken.

Generally, you can't place any aquatic plant in the wrong kind of water. Which means if you carry a lily pad, you immediately know which kind of water you are looking at, even if it happens to be too shallow to have plants or fish of its own. Coral is (or was) an exception in that it drops a block which can be placed anywhere, but is no longer coral. Dunno about now. Have not yet found the ocean using default Wilderness settings.
