more specifically, your temporal stability is low.  That gear in the middel of your HUD indicates your temporal stability level.   There is an entry in the player handbook (H key) that explains in more detail.

would you be able to tell me where is in deep thermal baths like zinc, gold etc. is there a list of ores with their depth? this would usually help me I have my own mine in my world instead of looking for caves

You need to work the iron bloom on an anvil (at least bronze) with a hammer (at least bronze) to make it into ingots.

just hammer away the greyish parts and hammer the rest into ingot form.
