Brandybuck
Not sure what benefit alcohol would provide, but it was terribly important to the development of civilization. Especially beer. So why not make beer out of the rye and spelt? (And mead from honey, wine from berries). Don't even need hops, that was a relatively recent innovation. Think of the stuff we could have: Malting floors, mash tuns, more uses for cellar, etc. Glass bottles for portability. Leading to distillation and asploding stills. Then the results of distillation could form the basis for some medicines. The obvious benefit is happiness, but hard to show that in a game. Maybe have it counteract the time wibble / insanity stuff by slowing it down?
Thundathighs
If you look at the Dev Roadmap, one of the bullet points is "Alcohol Preparation in Barrels", so I think it will get added at some point. I haven't seen any recent mentions of it on discord, so it might be a while before it gets added to the game. It would be kind of weird for alcohol to make your screen warp around less though haha
Stroam
Right now there is no hydration/thirst mechanic. Games can easily become bloated with things you can do to the game but don't necessarily add to the game. The difficulty with thirst is how to make it not another hunger bar with different consumables. Making alcohol is a popular suggestion and will most likely be added to the game at some point once the previously mentioned hurdled is solved. Erik
An alchemy system could also be a reason for brewing that is kinda realistic, I have some more detailed suggestions on it here:

I agree with this, and have been thinking: Starvation will have debuff levels that will kill after a longer period, and the thirst bar is the one that will take health away when it is empty. The starvation debuffs will not be pretty, like slower movement speed, the temporary loss of a baggage slot, and health reduction. Then again, if that over complicates things then the hydration bar will add buffs instead, and the different drinks will add special buff conditions. I would love to see a high tech level vodka made in a s still that allows you to see ore deposits through stone, the higher the gravity, the longer you can see.
