So it's been a little bit since I played the game so they might have changed it but idk. I've been thinking and are the mushrooms that are super poisonous just there to clown on people who dont read or something? You cant make poisons or potions (idek if there will be potions or poisons given the game's more 'realistic' approach (I say as it has interdimensional creatures in it)) and other than the less poisonous ones serving as a food item in desperate times some of them will just kill you unless youve raised your max health quite a bit.

Though I do appreciate the immersion I get from it, because nature is doing its own thing regardless of what you want to do with it or how useful it would be.

You can also feed them to some animals (who don't get hurt/sick from eating them) or leave them out to turn to rot for compost.

I think the immersion angle is the main point but there are a few lesser used for them. I know that some kind of alchemy is on the roadmap down the line, so it could also be one of the many things they put in the game knowing they wanted to use it later.

Somethings are just part of the world.

There are some people who think that everything in a game has to be a boon to the player, im not one of them and think that a game should a solid mix of useful and not things that you can encounter/ use

Absolutely on board with you on this one. Not everything should be there to make things easier, otherwise it wouldn't be a "survival" game. You've got to have a big mix of good, bad, and just there for the sake of being part of the world.

Plus, they look pretty. And I'm all here for things that add to the natural environment that players aren't encouraged to just rip from the ground the moment they see it.

What do you mean the poison mushrooms are not useful.  Some of those "poisonous" mushrooms are just dual purpose magic items in disquise!   Don't trust me?  Take the Death Cap mushroom, this magic items instantly heals you and returns you to spawn.  Consider having one of these when you're deep in that cave and lost the way out, chomp on one of these magic items and PRESTO! you're home again.

Minus all your items, however, so unless that's all you were carrying, uh... good luck.

Not if one turns "keep inventory" on. 🙃

Echoing what others have said already, some things are just a natural part of the world, and those things won't always be a direct benefit to the player. Herbalism is on the roadmap, so some of the poisonous shrooms might see more use when that gameplay loop is introduced. The poisonous shrooms can also be a fun way to prank friends on occasion, and depending on the shroom some of them can work as emergency survival food if you've got nothing better to work with. For example, bitter boletes will only do one hitpoint of damage, which isn't really ideal but hey, it does taste like not starving!

I also think, perhaps, that some players don't think to check the handbook or tooltip before they eat the shroom. In which case, they're going to learn a valuable lesson rather quickly. I've not seen it happen with shrooms, exactly, but my friend was pretty bad about eating certain poisonous berries from the Wildcraft mod and it was always funny hearing the resulting rants when it happened. 🤣

Did I say anything about what happens to, in your case, ill-gotten gains?  Nooooo, I only mentioned it was a healing and teleportation item. :P
One could make comments about reading comphrension, but I won't.

If they are, it worked on me the first time I played - somehow it did not occur to me that a mushroom called "funeral bell" that also tells you the negative health effect was poisonous. I am generally the kind of person who will read tooltips and the handbook so that felt pretty dumb of me lol. It actually happened twice before I realized. Now I'm doing a playthrough with mods that add a bunch of mushrooms and hide the info on foods until you've tried them a few times so aside from the vanilla ones I already recognize, it is actually a gamble this time. I don't think I would want that feature in vanilla but I do like that there are poisonous mushrooms and the newly added hallucinogens. I think it adds to the idea that it's an "uncompromising" survival game and not everything in your world is friendly. You have to not only forage for food but also learn what's food and what's poison, even if that just means reading the item description.

I, too, ate a mushroom without reading the tooltip, but luckily only lost about half my health. Worth it at the time because I was starving lol.

An immersive mode that hides the names of things until you somehow "discover" them could be interesting, especially given the detail on a lot of the models - people with real-world knowledge can often identify things by sight alone.
